This drink stems from the Brazillian Caipirinha, but gin is used in place of the traditional ‘cachaca.’ It’s super simple – the key is crushed ice with generous amounts of lime & mint.
You will need:
- 1 tablespoon of brown sugar
 - 2 tablespoons of chopped mint leaves
 - 2 limes, quartered
 - Crushed ice
 - 1 shot each of Mt Gay Rum & Rogue Society Gin
 - Soda water, to serve
 
To make:
- Place the sugar, mint and lime in a cocktail shaker & muddle until the mint has broken down & the limes have released their juice
 - Add the crushed ice, rum & gin & shake well
 - Pour into a glass & top with soda water
